PANCAKES

PANCAKES

I love pancakes. I hate how they are all gone by the time you are frying the last one, so now when I make pancakes, everyone is banned from the kitchen until they are all done. 

These pancakes are thin and crepe-like not the thick fat American style ones. The recipe is super simple and is perfect for brunch or breakfast or lunch or dinner................. basically pancakes are great whenever. 


PANCAKES

Ingredients
1 cup (125g) plain flour
1 (250ml) cup milk
1/2 cup (110g) sugar
1 egg
A splash of sparkling water or light beer



Directions
Put the flour and sugar into a bowl, in a jug whisk together the egg and milk. Make a well in the centre and add the milk mixture. 

    

Using a spoon or a balloon whisk, start from the centre and stir slowly incorporating the flour from the edges. This helps give you a smooth batter with no lumps; Add sparkling water or beer and whisk to incorporate. 


Put in the fridge to rest for about a minimum of 15 minutes or overnight. This step is not compulsory but believe me, it’s really worth it. Put VERY LITTLE oil about an eight of a teaspoon into a non stick frying pan and swirl it around or just use a couple of squirts of cooking spray. 

Pour in a quarter cup of batter into the middle of the frying pan and swirl around the pan. Flip over when bubbles start to appear on the surface and fry for on the other side for a further 30 seconds to a minute. 


To keep warm place on an oven proof plate, cover with foil and place in a warm oven to keep warm while you fry the rest. Repeat until all is used up batter 


Serve with your favourite syrup and some bacon or hot dogs (I used frankfurters).
